Rocket, goat's cheese and honey bruschetta
Place the slices of baguette under a hot grill for 2-3 minutes on each side until they are lightly toasted. Then rub the toasts with the clove of garlic using the cut side of the clove, divide between plates and drizzle over the extra-virgin olive oil.
Divide the rocket leaves between the slices of toasted baguette, then crumble over the goat's cheese and drizzle with the honey.

You will need:
4 medium slices of a large baguette
1 clove of garlic, cut in half
2-3 tablespoons extra-virgin olive oil
2 handfuls of rocket leaves
150g (5½oz) goat's cheese
4 teaspoons honey
